
We didn’t have any snacks in the house and John wanted some biscuits so I decided to make these from what we had in the cupboard and they are really nice. The peanut-butter buttercream part of the recipe makes a lot of filling, probably too much for the number of biscuits the shortbread part of the recipe makes so next time I would reduce the quantities on this part of the recipe. The biscuits themselves are quite big, which is great, but I think next time I would cut them smaller and make more or reduce the quantities I used.
